Makes approximately 10 scones.
1lb Self-Raising Flour 1 Egg
4oz Margarine 200ml Milk
1 Level teaspoon English Mustard Powder ½ lb Grated Cheese (I use Red Leicester)
1 Level teaspoon paprika
Rub the margarine into the flour and add the mustard powder and paprika (this helps bring out the flavour of the cheese). Stir in the grated cheese and add the egg and milk. Stir the mixture gently until it forms a dough. Cut the dough into scone shapes and sprinkle a little extra cheese on top of each scone for extra colour and flavour. Bake for 15 to 20 minutes at 200C, Gas Mark 6.
